Puerto Rican sofrito, often referred to as recaito is a vibrant green blend of aromatic herbs and vegetables that serves as the flavorful foundation for many traditional dishes. This essential cooking base is deeply rooted in the island's culinary heritage reflecting a fusion of Taíno, Spanish and African influences.

The term sofrito originates from the Spanish word sofreír, meaning "to sauté" highlighting its role in lightly frying ingredients to release their flavors. In Puerto Rican cuisine sofrito is typically made by blending fresh ingredients such as onions, garlic, green peppers, cilantro and culantro into a smooth puree. This mixture is then sautéed in oil to form the base for a variety of dishes including stews, rice and beans.

My name is Luis Cintron from San Juan, Puerto Rico. My culinary journey began in early childhood influenced by the rich traditions of my family. At 49 years old I reflect on how my love for cooking has always been a central part of my life. Growing up I learned the art of cooking from my parents who both held a deep passion for food. My family has a remarkable number of male cooks making cooking not just a skill but a cherished tradition. The kitchen has always been a haven for me where I pour my heart into every dish I create. Every meal is a labor of love and sharing food with others brings me immense joy. Cooking isn't just something I do; it's an integral part of who I am a legacy passed down through generations filled with flavor and love.

From a young age I discovered my passion for baking starting my journey at the age of 12. Over the years I honed my skills and became an accomplished baker in Puerto Rico working at three different bakeries. My experience allowed me to master the art of making bread from scratch and crafting a variety of pastries and baking delectable cakes. I took pride in decorating each cake with creativity and precision transforming them into stunning centerpieces for any occasion. My love for baking not only fulfilled my artistic expression but also brought joy to those who savored my creations making my time in the bakeries truly fulfilling.
